
Makes approx: 24 biscuits
125gms butter, softened
1/2 cup caster sugar
3/4 teaspoon bicarbonate of soda
1 tablespoon cold milk
1 cup plain flour
2 cups rolled oats
Preheat oven to 180°C.
Line shallow baking trays with non-stick baking paper.
Beat the butter and sugar until creamy. Dissolve the bicarbonate of soda in milk and add to butter mixture. Fold through the flour and the oats until well combined. Roll out into a 1cm thickness and cut into rounds.
Bake in the pre-heated oven for 15-20 minutes or until golden.
Cool completely before serving with goats cheese and your favourite fruit chutney.
