Garden2Kitchen had a ball at the Sample Food Festival held at Bangalow Showground. Phil and I had so much fun sharing our garden and cooking tips.
I cooked up a Lemon, Ginger Four Herb Salad with Lemongrass Chicken Satay Skewers. The recipe will be in Delicious magazine soon so I can’t give it away but if you go to my recipe on this blog called Char-grilled Sticky Chicken Salad with a Ginger, Lemon and Herb Dressing. The salad ingredients are different but the dressing the same.
To make the Macadamia Satay Sauce, place macadamia butter in a saucepan with sweet chilli sauce (or Davidson Plum Chilli sauce) coconut cream, soy sauce, fish sauce and lime juice. Stir over a low heat and serve with chicken, pork or beef skewers.
After our show we went to the Banagalow Cooking School where I was guest chef (Phil was my assistant) at the Sample Food Festival Masterclass.
All the guests seem to enjoy learning how to cook up a Seafood Paella. The recipe is in an older post too. There was squid to clean and most of the squid had a fish inside, I found a prawn but check out the size of this sand whiting found in a squid, added bonus. Enjoy.
